Ingredient
Mutton curry cut 1 kgGround masala
Ginger 30 gm
Garlic 30 gm
Green chilli 30 gm
Cinamon 1 inch stick
Clove 4-5 no.
Pepper 4-5 no.
Green & Black
cardomom 3 & 2
Onion chopped 100 gm
Grated coconut 200 gm
Cumin seeds 1 tsp
Sesame 1 tsp
Dry red chilli 5-6 no.
Poppy seeds 1 tsp
Coriander seeds 1 tbsp
Turmeric pwd 1 tbsp
For gravy
Chopped onion 250 gm
Asafoetida 1 tsp
Cumin seeds 1 tsp
Garam masala
(Click) 1 tsp
Kolhapuri masala(Click) 1 tbsp
Red chilli pwd 1 tbsp
Salt to taste
Lemon juice 2 tbsp
Method
Take little oil in pan, saute all the ingredients under ground masala and grind to a smooth paste by adding little water.Take remaining oil in a thick bottom pan, add asafoetida, cumin seeds and chopped onion and fry till golden brown in color.
Add Ground masala, fry on slow fire till oil get separated, now add red chilli pwd cook for min.
Add sear mutton and mix with all the ingredients, add sufficient water and bring to boil then reduce the heat and allow to simmer for 20 min.
Now add salt, garam masala, kolhapuri masala and lemon juice, cook till meat is soft & tender and gravy is thick.
Garnish with chopped coriander leaves.
