Kakori Kebabs is prepared from spiced lamb mince on skewers and cooked on charcoal fire.
The Kakori kebabs are considered to be the world’s softest kebabs and they are said to “melt in your mouth”.
Raw papaya
paste 100 g

Ingredients
Lamb 1 kg with fatRaw papaya
paste 100 g
Salt 1 tbsp
Green chilli
Chopped 3-4 no.
Spices-
Yellow chilli
pwd. 1 tsp
White pepper 1 tsp
Garam masala

Corn flour 30 g
Cashew nut
paste 1 tbsp

flour 200 g
Ghee(clarified
butter) 100 g
Method
- Mince the meat till very smooth (mince without washing as it helps in binding).
- Add papaya paste, salt , green chilli and spices.
- Place the mixture in a deep pan keep a live coal in a cup in the center.
- Put 2 tablespoons of ghee on coal and cover quickly for smoking. Keep covered for half an hour.
- Mix crushed onions, ginger garlic paste and remaining ingredients.
- Add to smoked mince. Keep for half an hour.
- Add roasted gram flour and mix well.
- Take a skewers and grease it.
- Take a portion of mince mixture and spread on skewers with slightly wet hand into oblong roll around the skewers.
- Roast on barbecue grill on a slow charcoal fire for few minutes till they turn to a golden pink brown.
- Take out carefully from the rods with the help of cloth.
- Arrange on serving dish and garnished with onion rings, slit green chilies and fresh coriander chutney or mint chutney.
- Serve it hot.
For oven cooking( Temp- 425 f-220 c)
- Shape the meat around the skewers and place the kebabs on to a grill over a drip tray in a pre-heated oven for 12-15 min.
- Brush with Clarified butter and cook another 2-3 minutes.
