Fried egg curry

Ingredients for 4 serving

Boiled Egg                       8 nos
Onion                               2 nos
Tomato                            4 nos
Green chilli                     3-4 nos
Ginger chopped              1 tbsp
Garlic chopped               2 tsp 
Fresh cream                    50 ml
or milk
Turmeric                      1 tsp
Red chilli pwd             1 tbsp
Coriander pwd             2 tbsp
Curry leaves                5-6
Garam masala             1 tbsp(see)
Chat masala                1 tbsp(see)
Oil                               100 ml
Whole spices
Cardamom green           4 nos
Cardamom black           2 nos
Bay leaf                         2 nos
Cinnamon                     2 (1 inch) 
Cloves                           8-10 nos
Black pepper                4-5 nos



Preparation:

Onion- Peel and slice
Tomato- Make a slit cross at the bottom of it don't cut, then blanch it.
Spice mix- take a little water add turmeric, red chilli, coriander pwd mix well.
Egg- Fried the boiled egg till brown color appears.

Method:


  • Heat oil in pan add whole spices and curry leaves cook for 5 sec, Then add chopped ginger, garlic and green chilli and saute for 2 min.
  • Now add sliced onion fry till golden brown, add tomato cook for another 5 min.
  • Now turnoff  heat and cool down the mixture remove extra oil,whole spices form it except black pepper, clove and green cardamom, then blend to fine paste.
  • Now heat the oil removed earlier and pour the blended mixture into it, add spice mixture, 1/2 cup water or as u required and cook for 4-5 min.
  • Add fresh cream, Eggs make a boil then add the garam masala, chat masala and adjust the seasoning.
  • Garnish with chopped coriander and serve hot.
