This rustic salad couldn't be any simpler. Arrange roundels zucchini and fresh mozzarella on a platter,drizzle the vinaigrette, sprinkle the salt and chilly flakes and gratin-ate under the salamander.
250 gm Zucchini yellow and green each
250 gm Mozzarella
50 gm Cherry tomato
Basil leaves for garnishing
50 ml Olive oil
1 tsp Red chilli flakes or
Crushed black pepper
30 ml Lemon juice

Method
- Cut the zucchini into roundels and grill them.
- Emulsify the oil and lemon together to make vinaigrette.
- Now take a plate and arrange zucchini , drizzle the vinaigrette, sprinkle the salt and chilly flakes.
- Place the mozzarella slices on the top, cherry tomato and basil leaves.
- Now gratin-ate under the salamander and just when the cheese is about to melt , remove and serve.
