Sewainya (Vermicelli pasta pudding)

One of my moms signature recipe, It is really simple to make with few ingredients required which are easily available. It is roasted in ghee which gives it a nice aroma and cooked on slow fire till milk reduces. 

Ingredients for 4-5

Sewainya (Vermicelli pasta pudding)200 gm Vermicelli/sewain
150-200 gm Sugar(As per your taste)
400 ml Milk
1/2 tsp Saffron
100 gm Ghee(Clarified Butter)

For garnish
Pinch Cardamom pwd
10 gm Pistachio nuts
30 gm Almonds
50 gm Cashew-nuts
10 gm Raisins


Method

  • Soak saffron in little milk, Cut nuts into slices.
  • Heat ghee at moderate flame in pan, Fry vermicelli on slow fire till light brown.
  • Add milk and cook for 3-4 minutes stirring continuously.
  • Add sugar mix well, cook gently until sugar dissolve, add saffron into it and mix well.
  • Cook it till milk reduces and soaked by vermicelli, remove from heat.
  • Add half of sliced nuts and cardamom give a mix.
  • Garnish with remaining nuts and serve hot or cold.
