Baked aubergine and mozzarella

It is tasty and delicious Italian recipe which is similar to the lasagna, In place of lasagna pasta sheet slice of aubergine is used.

Baked aubergine and mozerralaIngredient for 5__portions

250 gm Large aubergine
250 ml Red Tomato sauce
30 gm Basil leaf
200 gm Mozzarella cheese
Salt to taste
Flour for dusting
Refined oil for fry(optional)
30 gm Parmesan cheese
4-5 Half sliced cherry tomato

Method:


  • Slice the aubergine with 1.5 cm thick ,sprinkle some salt kept aside for couples of  minutes dust in flour and deep fry golden brown.( for healthier option bake it instead of frying it )
  • Take a square mould spread some tomato sauce on bottom then put fried/baked aubergine layer, chopped basil and final layer of mozzarella ,repeat the process for 2 time. Finally top with remaining sauce and mozzarella cheese.
  • Keep the mould in the refrigerator so that it may set.
  • Put the mould in the preheated oven for 15-20 min at 200 degree , put sliced cherry tomato and grated Parmesan on top and gratinate under salamander.
  • Give the garnish of basil leaf and serve.
