Kolhapuri masala

Ingredients for 1/2 kg

100 gm red chilli powder
 30 gm coriander seeds
 25 gm sesame seeds
Kolhapuri masala10 gm cumin seeds
 5 gm mace
50 gm cinnamon
10 gm piece of ginger
2 no. cardamom pods
1 no. black cardamom
1/2 tsp mustard seeds
10 gm coriander leaves
 5 gm cloves
1 no. bay leaves
70 gm dry coconut
30 gm garlic
1 tbsp poppy seeds
1 tsp pepper corns
A pinch asafoetida
1/2 tsp turmeric
1 tsp fenugreek seeds
100 ml refined oil
10 gm salt
A pinch nutmeg

Method


  • Roast all the ingredients in the oil over a very slow flame until fragrant.
  • Cool and grind to a fine powder.
  • Store and use as required.
