Moroccan lamb

Ingredients for serving 4-5

Lamb boneless              1 kg
Onion sliced                 250 gm
Cinnamon sticks          1 inch
Garlic                           1 tbsp
Ginger                          1 tbsp
Coriander pwd             1 tbsp
Seasonings                    to taste
Cumin seeds                1 tsp
Paprika                       1 tsp
Fennel seeds                1 tsp
Stock                            300 ml
Tomato puree               50 gm
Bay leaf                        1 no.
Saffron                          1 tsp



Method


  • Take a pan and heat oil now fry the lamb till brown in color.
  • Remove lamb from the pan keep separate in a plate.
  • Now fry onion in same oil lamb is cooked for few min. season it.
  • Add garlic, ginger, coriander, cumin, paprika, fennel, bay leaf and saffron fry them to get their aromatic flavor.
  • Next add tomato puree and brown lamb into it, add stock and simmer for hour or sauce looks like beaten curd.
  • Before serving add some chopped parsley or cilantro.
