Rogan Josh(Lamb stew)

It is a signature Kashmiri cuisine and derives its name from the Persian words: Rogan, which
means "oil" and Josh means "intense heat". Thus, Rogan Josh means made in oil at intense heat.

Lamb mutton
pieces                  1 kg
Raw papaya
paste                    3 tbsp
Onion, large        1 no.
Ginger, Garlic
paste                    2 tbsp
Curd                    1/2 cup
Ghee/ Oil             200 ml
Asafetida             A pinch
Cloves                  6-8 pieces
Cumin                  1 tsp
Turmeric pwd      1 tbsp
Green cardamom          4 no.
Black cardamom          2 no.
Ginger pwd                  1 tsp
Fennel pwd                  1 tbsp
Salt                               to taste
Cinnamon                    2(inch) stick
kashmiri red chilli
pwd soaked in half cup
of water                              2 tbsp
Ratanjot                             1 tbsp
Black pepper pwd              1/2 tsp


Preparation

Mutton- wash and marinate with G&G paste, raw papaya and curd.

Method


  • Heat Ghee in the pan and add the cinnamon, green & black cardamom, cumin, cloves and chopped onion fry till golden brown.
  • Now add the marinated mutton stirring to avoid sticking till liquid from curd is dried up.
  • Now add the remaining ingredients into it and add 2 cup of water stir it again.
  • Cover it with a lid and allow to cook till mutton is tender and cooked on low flame.
  • Garnish it with coriander leaves and serve hot with rice or naan.
