Hard-boiled eggs, shelled, cut in half, and filled with the hard-boiled egg's yolk mixed with other ingredients such as mayonnaise.They are served as a side dish, appetizer or a main course usually served cold.
50 g Potato
50 g Beans
250 ml Mayonnaise(see recipe)
10 nos Boiled eggs
50 g Diced tomato
20 g Parsley
Ingredients for _5 portions

Method
- Cut the eggs into half and scoop out the yolks.
- Mix the yolks with brunoise of cooked vegetables and season with salt pepper and half the parsley.
- Pipe the yolk mixture back into the eggs and arrange on a platter.
- Mix mayonnaise with remaining parsley into it.
- Pour the mayonnaise mixture over the eggs and sprinkle red chilli pwd. over it.
- Serve cold.
