Shahi gravy(white gravy)

The Shahi gravy is not the usual a tomato based gravy. It has a beautiful rich white color made up of onions, cashew nuts, cream, curd and melon seeds.

Ingredients- 1ltr.

500g                               ONION
120g                               CURD
120g                               CASHEW
50g                                 MELON SEEDS
50ml                              REFINED OIL
6no.                               GREEN CARDAMOM
3no.                               BLACK CARDAMOM
10-12no.                        CLOVES
4no.                               BAY LEAF
10g                                 MACE
2(1 inch stick)               CINNAMON
1tbsp                             GINGER PASTE
1tbsp                            GARLIC PASTE
50ml                             CREAM
to taste                         SALT

Method

Preparation

The curd-whisk well no curdle should be there.
The cashew-nut- Wash blanch and make fine paste
The Melon seeds- Wash blanch and make fine paste
The onion-Peel wash, boil, strain and blend to a fine paste.

Cooking-


  • Heat oil,add whole garam masala ,add ginger paste,garlic paste.stir fry for 2 minutes on slow fire.
  • Add onion paste and cook on slow fire until oil comes on surface.
  • Add whisked curd,keep on steering until boils.Cook for 30 minutes on slow fire.
  • Add cashew and Melon pastes,bring to boil and simmer for 30 minutes.
  • Adjust seasoning.
