Introduction
Ø"Arrabbiata"
literally means "angry" in Italian; the name of the sauce may well be
due to the heat of the chili pepper and one's reaction to it.
ØArrabbiata sauce in Italy,
is a spicy sauce for pasta.
ØPenne is a type of pasta with
cylinder-shaped pieces.
ØPenne is traditionally cooked al dente (cooked to be firm to the bite or
white of the pasta center disappears) and served with pasta sauces such as
pesto, marinara, or arrabbiata.
Ingredient
•Penne (Pasta)
•Tomato
•Olive oil
•Onion
•Garlic
•Crushed pepper corn
•Parmesan cheese
•Chili flakes
•Salt
•Basil leaves
•White wine
•Olives
•Tomato juice
1. Cook the pasta in
boiling water for 10 min.
2. After straining of the
pasta put some olive oil in it so that it doesn’t get stick to each other.
3. Blanch tomatoes
for 20 sec and peel skin.
4. Cut out the core
of tomatoes and use this part to squeeze the juice with the help of strainer.
5. Chop the tomatoes.

of Arrabiata Sauce
1. In
a pan, add olive oil and put the pan on flame.
2. Add
chopped Onions and let it cook for few minutes
and then add chopped garlic into the pan.
3. Add
wine.
4. Add
tomato juice and after few seconds add chopped tomatoes.
5. Add
few crushed basil leaves and chilli flakes.
6. Add
salt and crushed pepper corns accordingly.
Method
•Add olive oil into a heating pan.
•Add chopped onions and stir for few minutes.
•Add chopped garlic.
•Add white wine to enhance the flavour.
•Add halve cooked pasta into the pan.
•Stir and add arrabiata sauce to the pasta.
•Add broken leaves of basil, chilli flakes, crushed
peppercorns and salt.
•Serve in a hot plate.
•Garnish with grated parmesan cheese, olives and a leaf
of basil.
