It a traditional recipe of Rajasthan. Laal maans is a mutton curry prepared in a sauce of curd and hot spices such as red chillies typically very hot.
1 Cup ghee
3 Bay leaves
4 Pods black cardamom
4 Pods green cardamom
2 Medium cinnamon
2 Onion chopped
1 Cup curd
1 tbsp cumin
1 tbsp turmeric
2 tbsp coriander pwd
1 tbsp ginger garlic paste
2 tbsp Chopped garlic
1 tbsp raw papaya paste
10-15 Whole red chilli(deseeded)
salt to taste
Chopped green coriander for garnish
whole chilli- Soak in little water and make a paste.
Mutton- wash, clean and cut into 1 inch.

Preparation
Curd- Beat and add Cumin pwd, whole chilli Paste, turmeric, papaya paste, g&g paste, coriander pwd and salt.whole chilli- Soak in little water and make a paste.
Mutton- wash, clean and cut into 1 inch.
Method
- Heat ghee in a handi, add bay leaf, both cardamoms, and cinnamon.
- Then add Chopped garlic cook for a min., Add onion cook until brown.
- Now add the mutton cook for 5-6 min.
- Add the curd mixture into the mutton uniformly and simmer on medium-low heat till meat is cooked.
- Now adjust the seasoning and sprinkle some chopped over mutton.
- Serve hot with Phulkas.
