Fish and chips

Fish and chips is a hot dish of British origin, consisting of battered fish, commonly Atlantic cod or haddock, and French fries.

Ingredients for 6 portions

1 KG                        Fish fillets
4.00 Nos                  Egg
0.100 ml                  English mustard
30 g                         Salt
15 g                         Pepper pwd.
200 g                       Lemon
30 g                         Refined flour
30 ml                      Tartare sauce(see recipe)
20 g                         Parsley
200 g                       Breadcrumbs
200 g                       French fries
to fry                        Oil


PREPARATION

THE FISH- Marinate with salt, white pepper pwd., lemon juice, English mustard(made from ground mustard, turmeric and wheat flour), and chopped parsley. Refrigerate for 20-30 min.
THE LEMON- Cut into half.
THE PARSLEY- Wash the parsley for garnishing.

METHOD.


  • Take out the fish from refrigerator.
  • Now add some salt and pepper into the flour now dip the fish in flour then egg and coat with bread crumb.
  • Deep fry the fish till crisp outside and cooked inside.
  • Fry some french fries.
  • Assemble on a plate, Garnish with & parsley and serve with tartare sauce.
