Cream of Tomato Soup

Ingredients for 2 servings

400 gm Tomatoes blanched
1 nos carrots,peeled and diced
1 nos Onion chopped
2 clove garlic chopped
30 ml olive oil
1 cup Chicken stock( see here)
Seasoning  to taste



Method


  • Heat the oil in pan saute garlic, onion and carrots till soft.
  • Add tomatoes and stock and bring to boil.
  • In a blender make a smooth puree. 
  • If the puree is thick then heat in pan again add some stock.
  • Adjust the seasoning and serve hot with croutons.
