Ingredients for 2 servings
400 gm Tomatoes blanched1 nos carrots,peeled and diced
1 nos Onion chopped
2 clove garlic chopped
30 ml olive oil
1 cup Chicken stock( see here)
Seasoning to taste
Method
- Heat the oil in pan saute garlic, onion and carrots till soft.
- Add tomatoes and stock and bring to boil.
- In a blender make a smooth puree.
- If the puree is thick then heat in pan again add some stock.
- Adjust the seasoning and serve hot with croutons.
