Chicken Cacciatore

Cacciatore means "hunter" in Italian. In cuisine, alla cacciatora refers to a meal prepared "hunter-style" with tomatoes, onions, herbs, often bell pepper, and sometimes wine.

Ingredients for 4 servings

8 chicken thighs
1 tbsp salt
2 tsp ground black pepper
1/2 cup all purpose flour
3 tablespoons olive oil
1 large red bell pepper, sliced
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
500 gm diced tomatoes with juice
3/4 cup chicken broth(see here)
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves

Method


  • Coat the chicken pieces with 1 teaspoon of each salt and pepper. Dust the flour into chicken pieces to coat lightly Remove the excess Flour.
  • Take a pan heat the oil on medium-high flame, add the chicken pieces and shallow fry, about 5 min. per side or until brown. Take out the pieces in a plate and set aside.
  • Add bell pepper, onion, garlic to the same pan and saute over medium heat for 5 min. season with salt and pepper.
  • Now add the white wine and simmer about 3 min.
  • Add tomatoes with their juice, chicken broth and oregano.
  • Then add the chicken pieces to the pan and coat with the sauce. Continue simmering until the chicken is cooked about 20 min.
  • Turn off the heat and remove in the platter sprinkle chopped basil leaves and serve.
