Bread butter pudding

It is made by layering slices of buttered bread scattered with raisins in an oven dish, over which an egg, milk or cream mixture, normally seasoned with nutmeg.

Butter                                     50 g
Bread(white or brown)          6 slices
Sultanas(raisins)                    50 g
Cinnamon pwd                      1 tsp
Milk                                       300 ml
Cream                                    50 g
Eggs                                       2 no
Sugar                                      20 g
Nutmeg                                   Pinch

Preparation

Grease a pie dish with butter.
Bread- Remove the crust. Spread butter on each slice on one side, then cut into triangles.
Custard- Warm milk and cream in a pan gently, don't let it boil. Add egg into a bowl, Three quarters of the sugar and whisk until pale. Add the warm milk and cream mixture and stir well, then strain the custard into a bowl.

Method

  • Arrange a layer of bread, butter-side up, in the bottom of the dish, then add a layer of sultanas.Sprinkle cinnamon.
  • Repeat the layers util you used all your slice.
  • Pour the custard over the prepared bread layer and sprinkle some nutmeg and remaining sugar and leave to stand for for 20 min.
  • Preheat the oven at 180 degree.
  • Place the dish into the oven and bake for 30 minute, or until the custard has set and the top is golden brown.
