Akuri is a spicy scrambled egg dish eaten in Parsi cuisine. Akuri is cooked till just about runny and the eggs are never overcooked.
Onions 50 g
Turmeric 1/2 tsp
Chopped coriander 30 g
Chillies 30 g
Crushed pepper corns 1/2 tsp
Coriander sprigs 20 g
Oil 50 ml
Salt to taste
Ingredients for _4-5 portions
Egg 10 pcsOnions 50 g

Method
- Heat oil and add chopped onions. Saute until light golden brown color.
- Add chopped chillies, turmeric and chopped tomatoes and cook.
- Add beaten eggs and cook until scrambled.
- Add salt pepper and chopped coriander.
- Serve with accompaniments.(like bread, chapatis and parathas)
