Akuri

Akuri is a spicy scrambled egg dish eaten in Parsi cuisine. Akuri is cooked till just about runny and the eggs are never overcooked.

Ingredients for _4-5 portions

Egg                                         10 pcs 
Onions                                    50 g
Turmeric                                1/2 tsp
Chopped coriander                30 g
Chillies                                  30 g
Crushed pepper corns           1/2 tsp
Coriander sprigs                    20 g
Oil                                         50 ml
Salt                                        to taste




Method


  • Heat oil and add chopped onions. Saute until light golden brown color.
  • Add chopped chillies, turmeric and chopped tomatoes and cook.
  • Add beaten eggs and cook until scrambled.
  • Add salt pepper and chopped coriander.
  • Serve with accompaniments.(like bread, chapatis and parathas)
